5 recipes using watermelon easy to prepare and good to taste!

Symbol of summer fruit, watermelon can be served in different ways.

Watermelon is a fruit rich in minerals and vitamins A / B / C. During the summer, eating it often is the best way to make naturally the load of these vitamins.
We should not forget that at this time our skin suffers most from dehydration due to prolonged exposure to sunlight and high temperatures. Integrating in our power this prodigious seasonal fruit, our body will immediately hydrate and our skin will gain benefits.



1. SANDWICHES GOATS
  Serves 4 people
 
INGREDIENTS:
1/4 medium sized watermelon
A handful of fresh mint leaves
250 gr. goat cheese
Crusty bread sliced thin
Olive oil
Salt q.b.
Freshly ground pepper to taste

PREPARATION
In a bowl, crumble the goat cheese and add the mint previously chopped. Mix everything adjusting with salt and pepper to have a better taste. Meanwhile, cut the slices of bread so as to form triangles. Toast and drizzle with olive oil. Spread the mixture obtained with goat cheese on top of the bread.
Previously take off the seeds and peel of the watermelon,than try to obtain from it thin slices that have the same shape of the slices of bread. Place them on the cream cheese and season again with salt and pepper to taste
Serve the sandwiches at room temperature.

 



2. GREEK SKEWERS
  Serves 4 people
 
INGREDIENTS:
2 tablespoons of chopped herbs (cilantro, parsley, basil, mint)
4 tablespoons olive oil
16 wooden skewers
16 cubes of watermelon without seeds
16 cubes of feta cheese
16 Kalamata olives, pittede
Salt and freshly ground black pepper q.s.

PREPARATION
In a small bowl, add the olive oil to the mix of herbs. Season with salt and freshly ground black pepper and set aside.
Take a skewer and slide a cube of watermelon, a cube of feta and, finally, an olive. Make sure that once snapped, you can taste all three flavors at the same time. Complete the preparation of the remained skewers in the same way. Place the skewers on a platter next to each other and season with salt and freshly ground black pepper.
Sprinkle with the mixture of oil and herbs already prepared. Serve immediately.

 



3. SALAD PANZANELLA
  Serves 4 people
 
INGREDIENTS:
4 slices of bread baguette
1/2 teaspoon garlic powder
4 tablespoons olive oil
200 gr. diced watermelon
100 gr. Diced cucumber
1 red onion, finely chopped
100 gr. spinach
Pitted olives
Balsamic vinegar, salt and pepper

PREPARATION
Begin the preparation by pre-heating the oven to 220 ° C.
Cut the bread into small pieces, place in a bowl and season with olive oil and garlic powder. Bake from 8 to 10 min. or until you see the bread goldened. Remove from oven and let cool.
Next, mix well in a bowl all the other ingredients.
Add the bread crisp, seasoned with olive oil, vinegar, salt and pepper and serve.

 



4. LEMONADE WATERMELON
  For 12 people
 
INGREDIENTS:
250 ml. of freshsqueezed lemon juice
350 gr.fresh watermelon puree
200 gr. of sugar
1 L and a means of cold water
 
PREPARATION
Dissolve the sugar in the lemon juice. Pour the water and lemon juice in a carafe. Add the puree in a blender made by blending watermelon seeded and finally mix together.
Serve with ice.

 



5. PIZZA
 
INGREDIENTS:
1 whole slice of watermelon
Seasonal fruit
Shredded coconut powder
  PREPARATION
With the aid of a knife, cut the slice of watermelon into 6 slices, like a pizza.
Wash and clean the seasonal fruits, slice it and place them on watermelon as if you decorate a pizza.
Sprinkle with grated coconut powder and serve immediately or refrigerate until ready to use.
